Ingredients

Pickles Amount
Daikon Radish 1 units
Carrots 2 units
Small cucumber 2 unit
Jalapeno 1/2 unit
Boiling water 1.5 cup
Rice Wine Vinegar 3/4 cup
Sugar 1/2 cup
Salt 4 tsp
Spicy Mayo Amount
Kewpie Mayo 1/2 cup
Sriracha 2 tbsp
Fresh Lime Juice 1 tsp
Toasted Sesame Oil 1/8 tsp

Timings

Chop up ingredients: 30 min. Let pickles marinade at least 1 hour, best overnight. Can sit for up to 2 weeks.

Make Spicy Mayo immediately before serving.

Recipe

  1. Combine Spicy Mayo ingredients, adjust to taste.
  2. Cut up the daikon, carrots, and cucumbers into small matchsticks. Cut up jalapeno into rounds.
  3. Dissolve salt and sugar in the hot water. Stir in vinegar.
  4. Add veggies into glass jar, they should be fully covered.
  5. Leave for 2 hours until vegetables are slightly floppy. Put in fridge.
