Thai Red Curry Dumpling Soup

Ingredients

Ingredients Amount
Thai Red Curry Paste 1 tbsp
Vegetable Oil 2 tbsp
Water 1.5 cups
Coconut Milk 1 cup
Soy Sauce 1 tsp
Fish Sauce 1.5 tbsp
Sugar 1 tbsp
Trader Joes Pork Dumplings 1 bag
Baby bok choy, quartered 2 units
Green Onion 1 unit
Sesame Seeds 1 unit
Chili Crisp 1 unit

Timings

Marinade chicken thighs the night before (optional, but recommended).

Pan-sear or grill chicken thighs (approx 20 minutes).

Pan-sear bok choy, then cook with broth (approx 5 minutes).

Recipe

  1. Add oil to a pan and fry the thai chili paste for 2 minutes
  2. Add boiling water and coconut milk, mix
  3. Add soy sauce, fish sauce, and Sugar
  4. Add greens: bok choy, whites from green onion
  5. Add dumplings, bring to boil and let fully cook
  6. Season to taste
  7. Garnish with greens from green onion, sesame seeds, chili crisp
