White bean and kale soup with sausage

Ingredients

Shallots 2
Garlic 2 cloves
Medium Carrots 2
Roughly chopped cremini mushrooms 4 oz
White wine 1/2 cup
Stock 3 cups
White Beans 1 15oz can
Chopped rosemary 2 tbsp
Kale 1/4 bunch
Sausage 1 lb
Parmesan

Timings

10 min to chop up ingredients. 30 min cooking.

Recipe

  1. Cook shallots in large pot with salt and pepper until almost transparent, 5 min.
  2. Add wine to deglaze, cook until slightly reduced.
  3. Add stock, beans, rosemary. Bring to a boil, then add kale. Reduce to simmer, cook 15-20 min.
  4. In a separate pan, brown the sausage. Crumble, add directly to soup.
  5. Serve with parmesan cheese.
