Whole Roasted Cauliflower

Whole cauliflower
Salt
(optional) Sesame seeds
(optional) Pomegranate seeds

Timings

5 min to prep ingredients 15 min to steam cauliflower – CAN BE DONE AHEAD OF TIME. 30 min to roast cauliflower

Recipe

  1. Preheat oven to 410
  2. Trim the base of the cauliflower, so it can stand upright.
  3. Place in a medium sized pot, make sure the cauliflower can fit into it with the lid closed.
  4. Add water to ~2.5 inches, then bring to a boil and cover. Steam for 12-14 minutes until cauliflower is no longer pearly white.
  5. Move cauliflower to a baking sheet. You can let it cool down and dry out in the fridge overnight for maximum crispiness, but this is optional.
  6. Drizzle with olive oil and massage in so that all the florets are oiled. Season generously with salt and pepper.
  7. Roast in the oven for 20-30 minutes, until golden brown all over. Keep a close eye on it!
  8. Plate, and serve immediately.
